This recipe has been the biggest winner of my most recent fitness and nutrition group challenge!
It has been a staple for me, and great way to get my babies protein and veggies when they were little, and I am hearing from my clients that their stubborn meat and potatoes men, and secretly or not so secretly loving it!
This is my 3rd quiche in the last week and a half, and I have been even having it for a cold afternoon snack on the run to sports!
Here is the base recipe, but add what you like and make it your own! My winning addition this week was Oscar Mayer Real Bacon Bits and Cilantro!
Jill's Zucchini Quiche
Cook time: 45-60 minutes
Preheat oven to 350 degrees
Ingredients
1 small onion, minced
8 eggs
3/4 cup pancake mix
1/4 cup grated parmesan cheese
1 tsp parsley (optional)
2 small grated zucchini
pinch salt and pepper
(add in anything else you love!)
Directions
Mix all ingredients together in a large mixing bowl
Pour into a pie dish
Bake
Once cool, cut into 6 or 8 slices or leave whole.
